PARIS BREST. This pastry was created in 1891 to commemorate the Paris-Brest bicycle race. Made of a choux pastry filled and decorated with fruits, custard & whipped cream. The circular shape is representative of a wheel.
GATEAU ST. HONORE. This classic French dessert is named for the French patron saint of bakers and pastry chefs, Saint Honore (d. 600 AD), bishop of Amiens. Its a circle of puff pastry as a base with a ring of choux pastry piped on the puff pastry, topped with small custard choux dipped in caramelized sugar and finished with custard-whipped cream, chocolate curls.
