GATEAU ST. HONORE.
This classic French dessert is named for the French patron saint of bakers and pastry chefs, Saint Honore (d. 600 AD), bishop of Amiens. Its a circle of puff pastry as a base with a ring of choux pastry piped on the puff pastry, topped with small custard choux dipped in caramelized sugar and finished with custard-whipped cream, chocolate curls.
